Agidi is made from corn starch called Ogi.
- Remove grains of corn from corn cob (stick)
- Soak for four days in a closed jug.
- Strain water from jug and grind corn finely.
- Using a fine sieve strain grind corn several times.
- Leave to settle for 1 day and strain surplus water on top.
- Residue is ogi
- Mix strained residue and put in a pot.
- Put pot over the fire and cook mixing with a wooden spoon till colour changes
- Remove from fire.
